Krautchi is a kraut inspired by Korean kimchi, hence the name! It has the delicious Asian flavor profile from the trifecta of ginger, onion and garlic. Korean red pepper is added for depth, but it is not excessively spicy. A true kimchi is usually made with fish sauce, but all of TTTT’s products are vegan, so we skip that part. And we use red cabbage instead of Nappa cabbage, because we like the color and texture after fermentation. Carrots add a nice crunch. We eat Krautchi like a salad, but it also pairs nicely with pork tacos, or even sushi!

These Things Take Time was founded in February 2014 by me, Carolyn Ford. TTTT makes small-batch fermented vegetables, based in Louisville, CO. My education and employment background is electrical engineering. Several years ago I had a series of health problems, and was seeing an acupuncturist as part of my treatment. She was the first person to turn me on to the importance of the bacterial colonies in our guts to our overall health (especially digestion). I started fermenting for my own health, and it fixed me! I became an obsessed home fermenter, at the same time I was becoming less and less enamored of working in a cubicle. So I launched the company and set out on this journey.


I source locally when I can, and I work with local farmers in the summer to preserve their harvest and cut down on farm waste. I will ferment just about anything! I am a firm believer in "eat your medicine," and the science on fermented foods is very strong. I can be found at several farmers' markets around town during the summers.
