This is the classic sauerkraut, made with just cabbage, salt brine... and time. If you’ve only ever had vinegary, boiled kraut from a can, this is a whole other world. This kraut is tangy (from naturally produced lactic acid, not vinegar) and crunchy and incredibly healthy for you. Cabbage is also a great source of food for the probiotics themselves, so they can survive in your digestive tract better, and establish a healthy biome in your gut. You don’t have to eat kraut solely on a bratwurst! Have it on any sandwich, burger, or as a side salad. Eat it cold to maintain the probiotic benefit, but it will also cook wonderfully in a stew or pierogi.

These Things Take Time was founded in February 2014 by me, Carolyn Ford. TTTT makes small-batch fermented vegetables, based in Louisville, CO. My education and employment background is electrical engineering. Several years ago I had a series of health problems, and was seeing an acupuncturist as part of my treatment. She was the first person to turn me on to the importance of the bacterial colonies in our guts to our overall health (especially digestion). I started fermenting for my own health, and it fixed me! I became an obsessed home fermenter, at the same time I was becoming less and less enamored of working in a cubicle. So I launched the company and set out on this journey.


I source locally when I can, and I work with local farmers in the summer to preserve their harvest and cut down on farm waste. I will ferment just about anything! I am a firm believer in "eat your medicine," and the science on fermented foods is very strong. I can be found at several farmers' markets around town during the summers.
