Huajillo is an species of acacia that exclusive to the Edwards plateau of Texas and Northern Mexico.
Over grazing and drought have endangered the plants exsistance, but it is making a comback. Good rains in April 2012 allowed the bees to produce about 800 jars. The honey is ultra light in color and very mild. A must try for any would be honey connoisseur.
